Ingredients of Taisen's beef and bean enchiladas

  1. Take 1 packages of of soft tortillas.
  2. You need 2 can of of enchilada sauce or make your own.
  3. Take 1 of to 2 pounds of hamburger.
  4. Make ready 2 can of of pitted black olives ( optional ).
  5. Prepare 1 block of of cheddar cheese.
  6. It’s 1 block of of colby cheese ( colby cheddar or colby jack ) ( also optional otherwise use other cheese or another cheddar ).
  7. Prepare 1 medium of onion, chopped ( optional ).
  8. Prepare 2 can of of refried beans.
  9. You need 1 of salt and pepper ( desired amount ).
  10. It’s 1 of few dashes of red pepper for extra kick ( optional ).
  11. Take 1 of any other ingredient and spice you wish to add.
  12. You need 1 of sour cream ( optional ).
  13. Make ready 1 of salsa ( optional ).
  14. It’s 1 of diced tomatoes ( optional ).

How to make Beef and Bean Enchilada Casserole: Layer corn tortillas, beef/bean/chiles/spices, garlic sour cream, and enchilada sauce.Then those layers are repeated one more time.Instructions for Making Beef Enchiladas: Cook the rice according to package directions.For the enchiladas, I have made them with the original recipe (listed below) and then last night I didn't have all the right ingredients, so I used a can of RoTel that had the lime and cilantro in place of the can of green chilies.

Taisen's beef and bean enchiladas instructions

  1. Cook your hamburger with or without onion. Add in seasonings, pepper, red pepper and a touch of salt if desired..
  2. Chop / dice onion set on a plate or in a bowl.
  3. Shred the cheese and put in a bowl or on a plate.
  4. Drain and slice the black olives, set in bowl or on a plate.
  5. Take half a can of sauce and heat it up on the stove. Don't boil this. Just simmer to keep warm..
  6. Pour enchilada sauce on bottom of a casserole dish. Enough to just coat the bottom. You can add in some extra onion here if you like or even some pepper and mix it with a spoon.
  7. Heat up the refried beans in a pot.
  8. Pre heat oven to 350°F.
  9. Taking one tortilla at a time, place in the pot of sauce. Cover both sides of it with sauce. Remove it and put on a plate.
  10. Next add, hamburger, beans, onion, olives and cheese. Roll one side first towards you, then other side away from you. Make it tight if you can being careful as they will be slippery. Don't worry about the ends ! Your basically just folding each side over and overlapping them on the bottom. Careful not to over stuff otherwise they won't close.
  11. Place them seam side down in your casserole dish.
  12. Continue these one at a time until the dish is full. Take any remaining sauce and pour over top of them.
  13. Add any of the toppings, black olives, onion and anything else you might have on there, then sprinkle more cheese on top.
  14. Bake for 20 minutes or until desired and the cheese is nice and melted.
  15. Serve with or without sour cream and salsa. Enjoy !!.
