Bran Muffins Recipe. They weren't "typical" bran muffins because they were moist and delicious! I decided to experiment, so I made one regular batch and then one lowfat with egg whites for the egg, applesauce for the oil, and reduced fat buttermilk.

  1. It’s 1 1/4 cups of milk.
  2. You need 1 Tbsp of lemon juice.
  3. Take 1 of egg beaten.
  4. Take 1/3 cup of vegetable oil.
  5. You need 1 1/2 cups of bran cereal (looks like tiny matchsticks, not flakes).
  6. Make ready 1 1/2 cups of all purpose flour.
  7. You need 1/4 cup of firmly packed brown sugar.
  8. Take 1 tsp of baking soda.
  9. Make ready 1/2 tsp of baking powder.
  10. Take 1 tsp of cinnamon.
  11. It’s 1/2 cup of raisins, chopped dates or chopped walnuts (pictured).

Bran Muffins instructions

  1. Grease 12 large muffin tins or line with paper baking cups..
  2. Combine milk, lemon juice, egg, vegetable oil and bran cereal and set aside..
  3. In a large bowl, combine all dry ingredients including raisins, dates or walnuts and make a well..
  4. Add wet ingredients to dry ingredients, stirring just till moistened..
  5. Spoon batter into cups and bake in 350 degree oven till toothpick comes out clean (about 15 to 17 minutes)..
  6. Cool on a rack and store in an airtight container..
  7. Enjoy!.

In a small mixing bowl, pour the boiling water over the half cup of cereal.When cooled, mix in the vegetable oil and egg.While the water/bran mixture cools, whisk together the flour, sugar, baking soda, baking powder and salt in a large mixing bowl.Add egg and oil; beat well.Put into muffin pans sprayed with Pam.
