- Deep fry tofu for 5 mins on each side, set aside.
- Stir fry bell peppers, carrots and potatoes until soft.
- Add coconut milk, simmer for 2 mins.
- Add curry powder, simmer for 2 mins.
- Place fried tofu on serving dish, pour vegetables and curry mix on top of tofu, serve.
