The marinade is a simple mixture of dashi stock, soy sauce, mirin and sake.Some recipes don't use sake or dashi stock.Pour marinade sauce over quail and serve hot with your favorite side dish.I noticed in the other reviews the vinegar that was added and will probably put in a touch of that next time I make it.
