  3. In separate bowl, mix together wet ingredients.
  4. Add wet ingredients to dry ingredients.
  5. Add chopped apples, carrots, walnuts, and coconut and stir gently until we'll combined.
  6. Fill muffin cup about 2/3 of the way.
  7. Sprinkle unsweetened coconut on top of the muffins.
  8. Bake for 25-30 minutes, or until cooked through.
