Eggplant roll with cheese Recipe. In a large bowl, stir together the ricotta cheese, mozzarella cheese, Parmesan cheese and parsley. Roll up, and place in the baking dish seam side down.

- You need 6 pcs of big eggplant.
- Prepare 1 box of feta cheese.
- Make ready 5 tbsp of mayonnaise.
- You need 1/2 cup of oil to cooking the eggplant.

Now we are ready to assemble the dish.Place a heaping tablespoon of the ricotta mixture in the middle of each eggplant slice, then roll the sides over the filling as if making cannelloni.Pat it down so the filling spreads out without spilling out.Drain on paper towels and set aside.Add more vegetable oil as needed to keep the eggplant slices from sticking to the pan.
