These egg rolls are made with egg roll wrappers (which you can find at most grocery stores over by all the tofu in the produce section … well at least at Kroger) shredded cabbage and carrots, green onion, soy sauce, vinegar, ginger powder, and garlic powder.I actually buy two bags of coleslaw mix to save.Vegetable Egg Rolls are a welcome change over the usual Chinese takeout egg roll.This veggie egg roll recipe is great for vegetarians & meat-eaters alike!

  3. Fold the bottom corner over the rice, then fold the sides ontop. Once all three sides is covering the rice, roll carefully..
  4. Fry until golden and crispy. This was super easy and delicious. Only caveat is that the rice isn't seasoned as much as I would like, so you can adjust flavor by adding a bit of soy sauce or salt..

Quick tip: If your egg roll wrappers are very thin, roll the filling in two wrappers instead of one.It will make them extra crispy!The egg rolls are then fried for a few minutes until golden brown and crispy.

The only ingredient that's not vegan in this recipe is the egg used when wrapping the egg roll skin and the egg roll wrappers themselves.Gather the remaining ingredients (except the toasted sesame oil) and add everything into the skillet.Baking egg rolls definitely creates a different texture than frying, but I still liked them A LOT.I also experimented with freezing the egg rolls uncooked.After freezing I put them straight into a hot oven without thawing.
