  9. Crack all eggs and stir (I usually add some salt and pepper to taste) until eggs are slightly forming.
  10. Stir in all vegetables.
  11. Stir in sausage and bacon.
  12. Stir in parmigiano reggiano.
  13. Top the mixture with mozzarella.
  14. Sprinkle scallions on top of mozzarella.
  15. Place pan in middle of oven and cook for 15 minutes or until the egg is set.
  16. Turn up the oven to broil (or 500F) and finish for a couple of minutes until cheese is slightly brown.
  17. Remove from oven and let sit for 3-5 minutes.
