- heat oil in fry pan add mushrooms and jalapenos and sautee till mushrooms are golden brown.
- add beaten eggs to the pan and lift sides and tilt pan to allow what egg is stuck in center to go to pan.
- when egg looks mostly cooked add cheese and flip half of the egg up on the other half.
- let sit for about 1-2 minutes so cheese melts then transfer to plate.
