- Preheat oven to 375. Line baking sheet with parchment paper.
- In large mixing bowl combine all ingredients. (Mixture will be wet). Portion out to 1oz. meatballs. (I have a 1oz. Scoop for cookies that is perfect).
- Arrange on cookie sheet - don't overcrowd! They will give off a lot of moisture. I usually bake in 2 to 3 batches.
- Bake 35 - 50 minutes, turning every 15 min. (Really depends on the size of your meatballs & your oven's "personality".
- After they cool completely I portion out to single servings & freeze. I can grab a bag of 4 out of the freezer & they are thawed by lunch. I eat them warm or cold; by themselves; with zucchini noodles; the possibilities are endless!.
