- It’s 100 grams of Bread (strong) flour.
- You need 15 grams of Sugar.
- Prepare 15 grams of Miso.
- You need 10 grams of Grated ginger.
- You need 2 grams of Dry yeast.
- Take 75 grams of Water.

- Put the miso, water, and ginger in a heatproof bowl, and microwave for 1 minute to kill off the micro-organisms in the miso. If you don't do this, the dough will not rise well..
