Waina (Masa) Recipe. This recipe is the easiest and most soft and fluffy masa you can ever make. Masa or Waina is a rice cake that is from the northern part of Nigeria and is traditionally eaten by the Hausa tribe.

You can have Waina (Masa) using 10 ingredients and 8 steps. Here is how you achieve it.

Ingredients of Waina (Masa)

  1. You need 1000 g of Local Rice.
  2. Take 1 handful of Foreign rice.
  3. Make ready 1 Tsp of Baking Powder.
  4. You need 2 of Tblsp Baker's Yeast.
  5. You need 2 cups of Flour.
  6. You need 20 mls of soaked Potash water.
  7. Make ready 1 of large Onion Diced.
  8. You need 1 tsp of Salt.
  9. Take 3 tsp of Sugar.
  10. Prepare of Oil for frying.

Waina (Masa) instructions

  1. 1000g Local unpolished Rice. Wash Rice and Soak for 20-30minutes. Grind until fine and smooth..
  2. Get a handful of polished foreign rice, and Boil..
  3. Add boiled rice, Yeast and Baking powder, cover tightly and put in oven to rise for 45minutes or under the sun for 2-3hours..
  4. After completely risen, Add Potash water, sugar, salt and diced onions and mix..
  5. Get a special masa frying pan like this and put on stove (this is new though not the one am using)..
  6. Put 1Tblsp of oil in each hole and wait for 1min until hot and then Pour a half cup of the mixture in each hole and allow to cook for 2minutes until light brown.
  7. Flip to cook other side too.
  8. Serve singly or with any combination of choice mentioned above..
