Somali-style rice, when prepared for festive occasions, can be a satisfying meal on its own: The rice is cooked in a rich stock and often jeweled with pieces of meat and vegetables This version of the dish comes from Ayaan and Idyl Mohallim, twin sisters who make their own xawaash. This popular spiced Somali rice dish is known as bariis iskukaris.

  1. It’s 1 of kilo rice.
  2. Prepare 5 of tomatoes.
  3. Prepare 1 bunch of cilantro.
  4. It’s 3 of garlic clove.
  5. It’s 1 half of onion.
  6. Take 1/4 of Kilo meat.
  7. It’s of Spices.
  8. Prepare 1 teaspoon of curry powder.
  9. Take 1 teaspoon of cumin.
  10. It’s 2 packets of chicken stock.
  11. Take 2/3 teaspoon of salt.

Somali rice (isku-karis) instructions

  1. Cut all the vegetables into a blender and put half a cup of water (add more if needed) and blend.
  2. In a big pot put 3/4 cup oil and the meat that is cut. Add salt and seasoning..
  3. Put in the blended vegetables and stir. Let it sit for about 30 minutes and stir when needed..
  4. Boil 2.5 litres of water. Wash the rice and set it aside..
  5. In the pot with the meat check to see if the water is leaving and oil is shown. Then put the rice inside and stir..
  6. Then put the boiled water and stir. Cook it till it is soft and small liquid remains..
  7. Then put aluminum on top and cook in the oven for 20 minutes..

This one-pot rice dish can be very addictive.I've landed by chance on your Bariis Isku Karis youtube video and can't stop salivating ever since.This Somali rice dish is a popular dish known as iskudheh karis, it is a one pot cooking with rice and meat or chicken.
