- We have our nigerian local rice and the foreign rice for unparboiled rice..it is called Jasmine rice made from thailand..most times.i mix both our local nd the jasmine rice to make my masa…
- Wash your rice and soak it for 2hrs..wash nd keep aside,fetch a handful and boil it for jus 2-3mins..except if you want your masa to be unfluffy..especially if you are using our local rice.allow to cool.add to your wash soaked rice.mix together and blend not too soft.add your yeast..keep in a warm&dark place to rise.do not allow it to over rise.open cover mix immediately.add your baking powder,sugar,salt mix together.add water to get not too watery or thick consistency.add your slice onions…
- I add oil to my masa pan over night to avoid it been sticky to pan..heat on a low heat until pan is very hot,add your masa pudding to the pan.allow it for 5-7mins turn to the other side to fry too nd remove..masa is ready..it can be be serve with soup,kulikuli,beef,chicken etc..
