Ingredients of Pad See Ew / Stir Fried Wide Rice Noodles with Chicken
- Take 1 kg of Sen Yai or Wide rice noodles.
- You need 1 bunch of Chinese Broccoli.
- Take 2 of chicken breasts.
- You need 5 of eggs.
- It’s 6 clove of garlic.
- Prepare 1 1/2 tbsp of oil.
- You need 1/2 tsp of pepper.
- Prepare 1/4 tsp of salt.
- Make ready of seasoning.
- It’s 2 1/2 tbsp of light soy sauce.
- Take 2 tbsp of oyster sauce.
- Make ready 1 tbsp of sesame oil.
- Prepare 2 tbsp of dark soy sauce.
- Take 1 tbsp of sugar.
- You need 1 of side with chilli,vinegar,lime.
Pad See Ew / Stir Fried Wide Rice Noodles with Chicken step by step
- Sliced chicken breast to stripes ,crush garlic,chop chinese broccoli use only soft part,seperate wide rice noodles as it come in bunch.
- This recipe best to use the wok,but non stick pan work well too ,so heat the wok on medium ,fry garlic and chicken until no longer pink,seasoning with salt and pepper ,change to high heat to char chicken until get the good smell.
- Reduce to medium heat(protect from burning) ,add wide rice noodles,add all seasoning ,change to high heat again then stir up from the bottom with wooden spoon ,the noodles will change to golden brown now.
- Move noodles to one side of the wok,crack eggs and drop in ,beat the yolks ,let it set ,add green leaves,then stir up from the bottom,let all char but not burn ,turn heat off when the green leaves little bit soft but still crisp,serve hot with some lime sliced,vinegar ,chilli ..the success key to this one is the touch of char noodles,no clumps,no mushy..only control the heat ..just do it :).
