Waina (Masa) Recipe. This recipe is the easiest and most soft and fluffy masa you can ever make. Masa or Waina is a rice cake that is from the northern part of Nigeria and is traditionally eaten by the Hausa tribe.

- Prepare 4 cups of unparboiled rice.
- Make ready 1 of table spoon heap yeast.
- It’s 1/2 cup of sugar.
- Prepare 1/2 teaspoon of salt(optional).

- Make ready 3 of fresh chilli pepper chopped(optional).
- You need 1 of cooking spoon of groundnut oil.

Waina (Masa) step by step
- You take 1 cup of the rice and set aside. Wash and soak the 3 cups of the rice. Wash and parboil the 1 cup of rice you set aside, sieve and set aside..
- Once the rice is well soaked, you wash and take for grinding. Immediately after grinding, you add your yeast, as it requires warm atmosphere to rise. Add your sugar, chopped pepper and onion and the parboiled rice, mix thoroughly, then cover and keep to rise properly..
- If the weather is warm it wont take long to rise but if it is cold, it will take a while. While waiting, you start your fire, put the pan on fire so it will start getting hot. The frying pan is not the normal frying pan, is this "individual mold" the one with 4 molds..
- Once your mixture is risen, you will start frying immediately. You will apply your oil in the molds just small so it doesn't stick and not much so it doesn't soak oil..
- Within minutes your waina is ready to be served. Enjoy.
