This fried rice is a favorite of Hubby's and also was well-received by guests.It's easy to whip up quickly if you need to.I try to use the minimal amount of meat needed to give it good flavor to the whole dish when I make it just for the two of us.Pour egg mixture evenly over the rice and stir fry the rice at high heat until the rice is somewhat dry.

  1. Heat the pan with oil.Add shrimp and cooked over medium heat for about 5mins(don’t over cook).Remove shrimp with a slotted spoon and place shrimp on a plate set aside..
  2. Add the garlic and ginger,green chilli minced and cook for 1 mins stir intermittently.Then add onions,capsicum,beans,carrots and cook for about 5 mins or until vegetable begin to soften,stir intermittently..
  3. Push vegetable to one side of the skillet then add the eggs to the other side and cook to scramble stirring as necessary..
  4. Then add the shrimp,rice evenly drizzle with soya sauce,sugar,evenly season with salt and black pepper powder,chilli sauce and stir to combine cook for about 5mins..

You could always reduce the carbs by using cauliflower rice, but as I made this for my.Ordinarily whenever I cook shrimp/prawns, I use fresh raw ones I peel myself.This is one of the rare occasions when I buy already cooked and peeled prawns.
