  1. Soak the cous cous in boiling water (sufficient to just cover the grains) and leave for five minutes.

  8. Plate up the cous cous, chickpea and veggie mix, mushrooms and have the halloumi as a side dish. Slice up a tomato and add a spoon of greek yoghurt with a dash of chilli powder.
